Ingredients

For the marinade

  • ¼ cup lime juice Adds a refreshing zing and tenderizes the chicken.
  • 3 tablespoons honey Brings natural sweetness and helps caramelize the chicken.
  • 2 tablespoons olive oil Adds richness and helps with grilling.
  • 2 cloves garlic, minced Enhances flavor.
  • 1 teaspoon cumin Adds earthy flavor.
  • ½ teaspoon paprika
  • Salt and pepper, to taste Season according to preference.

For the skewers

  • 1 ½ pounds chicken breast, cubed Chicken thighs can be used for a richer flavor.
  • Wooden or metal skewers Wooden skewers should be soaked in water before use.

Instructions

Preparation

  • In a mixing bowl, whisk together the lime juice, honey, olive oil, minced garlic, cumin, paprika, salt, and pepper until well blended.
  • Add the cubed chicken to the marinade, making sure each piece is thoroughly coated. Cover the bowl and refrigerate for 30 minutes.
  • If using wooden skewers, soak them in water for about 15 minutes before grilling.

Grilling

  • After marinating, thread the chicken pieces onto the skewers, leaving a little space between each piece.
  • Preheat your grill to medium-high heat. Cook the skewers for 10 to 12 minutes, turning occasionally, until the chicken is cooked through.
  • Brush the skewers with any remaining honey-lime glaze during the last few minutes of grilling.

Notes

Leftover skewers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10 minutes. If possible, marinate for up to 2 hours for enhanced flavor.
