Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Trim and halve the Brussels sprouts. If any are large, quarter them for even cooking.
  • In a large bowl, toss the halved Brussels sprouts with Dijon mustard, honey, olive oil, salt, and pepper until coated.

Roasting

  • Spread the Brussels sprouts on a preheated baking sheet, cut sides down, making sure they are not crowded.
  • Roast in the oven for 18 to 25 minutes, tossing once near the end, until they are golden brown and crisp.
  • Finish with a squeeze of lemon juice or a splash of apple cider vinegar right after removing from the oven.

Notes

Leftovers can be used in omelets, quesadillas, or on flatbreads. Keep warm in a low oven for serving at parties.
