Glaze Ingredients

  • 1/2 cup honey 120 ml
  • 1/4 cup balsamic vinegar 60 ml
  • 1 cup fresh or dried cranberries 150 g
  • 1/2 cup crumbled feta cheese 75 g
  • 1 tsp dried thyme or rosemary

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • Pat the chicken breasts dry using paper towels, then season both sides with salt and pepper.
  • In a small bowl, whisk together the honey, balsamic vinegar, and dried thyme until well combined.

Assembling and Baking

  • Place the seasoned chicken breasts in a lightly greased 9×13-inch baking dish.
  • Pour the honey glaze over the top, ensuring the chicken is well coated.
  • Scatter the cranberries evenly over the chicken.
  • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and bake uncovered for an additional 15 to 20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 74°C).
  • Once the chicken is cooked, sprinkle crumbled feta cheese over the top and return to the oven to bake for another 5 minutes.
  • If desired, switch to the broil setting and cook for an additional 2 to 3 minutes for a bubbly and golden finish. Keep an eye on it to prevent burning!

Serving

  • Remove from the oven, top with fresh parsley if desired, and serve hot.

Notes

Consider using cherry or peach preserves instead of cranberries for a different fruity flavor. You can also add roasted vegetables for more flavor and a complete meal.
