  • 4 pieces boneless, skinless chicken breasts
  • 1 tbsp olive oil For greasing the baking dish
  • 1/2 cup honey (150 ml)
  • 1/4 cup balsamic vinegar (60 ml)
  • 1 cup fresh or dried cranberries (120 g)
  • 1/2 cup crumbled feta cheese (75 g)
  • 1 tsp dried thyme or rosemary

  • Fresh parsley for garnish (optional)

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  • Season both sides of the chicken breasts with salt and black pepper.
  • In a medium bowl, whisk together honey, balsamic vinegar, and dried thyme (or rosemary) to prepare the glaze.
  • Place the seasoned chicken breasts in the prepared baking dish and pour the honey-balsamic glaze over them.
  • Scatter cranberries all around the chicken.

Cooking

  • Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
  • After 20 minutes, remove the foil and continue baking for another 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  • Sprinkle crumbled feta cheese on top of the chicken and return to the oven for an additional 5 minutes.
  • Switch the oven to broil and cook for an extra 2-3 minutes for a golden finish.
  • Let the dish rest for a few minutes before garnishing with fresh parsley.

Notes

Make the dish ahead of time and refrigerate it unbaked for up to a day. Substitute cranberries with apples or pears if needed. Use flavored feta for an extra kick.
