Ingredients

Dry Ingredients

  • 1/2 cup fine or medium cornmeal Cornmeal gives the cornbread its characteristic texture.
  • 1/2 cup all-purpose flour Can substitute with gluten-free flour blend.
  • 2 tablespoons granulated sugar Adjust sweetness to taste.
  • 1 and 1/2 teaspoons baking powder Leavening agent for the cornbread.
  • 1/4 teaspoon baking soda Works with the acidity of buttermilk.
  • 1/4 teaspoon fine salt Enhances flavor.

Wet Ingredients

  • 1 large egg, at room temp Room temperature egg helps the batter rise.
  • 1/2 cup buttermilk Can substitute with milk and vinegar.
  • 3 tablespoons unsalted butter, melted and slightly cooled Provides richness.
  • 2 tablespoons honey Sweetener and flavor enhancer.
  • 1 tablespoon softened butter for the honey-butter swirl Adds sweetness when swirled into the batter.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Grease a small 6-inch pan, loaf pan, or 6-inch skillet.
  • In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt until evenly combined.
  • In a separate small bowl or measuring cup, whisk together the egg, buttermilk, 2 tablespoons of melted butter, and 2 tablespoons of honey.
  • Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.

Baking

  • Pour the batter into your prepared pan.
  • In a small cup, mash the remaining 1 tablespoon softened butter with a drizzle of honey. Dollop over the top of the batter and swirl lightly with a toothpick.
  • Bake for 18 to 22 minutes, until the top is golden and a toothpick comes out mostly clean.
  • Brush or drizzle a tiny bit of honey over the warm surface and add a sliver of butter to melt. Let cool for 5 minutes before cutting.

Serving

  • Cut into 4 to 6 pieces and serve warm.

Notes

For best results, measure flour lightly and don't pack it. Use room temperature ingredients when possible. Leftovers are still great warmed in the microwave.
