Ingredients

Cookie Base and Filling

  • 72 pieces mini Nilla Wafer cookies (or regular-sized)
  • 1 bag (7 ounce) Rolos, unwrapped

Chocolate Coating

  • 8 ounces chocolate chips or melting chocolate wafers
  • 1 teaspoon coconut oil (optional) Added to make chocolate easier to dip.

Instructions

Preparation

  • Preheat your oven to 300°F (150°C).
  • Line a baking sheet with parchment paper for easy cleanup.
  • Place 36 mini Nilla wafer cookies onto the prepared baking sheet, spaced out for even cooking.
  • Put a Rolo candy in the center of each cookie.
  • Place the baking sheet in the oven and heat for 90 seconds to soften the Rolos.
  • Remove the tray from the oven and gently place another cookie on top of each Rolo, pressing slightly.
  • Refrigerate for 15 to 20 minutes, until the chocolate is set and the cookies are firm.

Coating

  • Melt the chocolate using a double boiler or microwave, adding coconut oil if using chips.
  • Dip each cookie sandwich into the melted chocolate, letting excess drip off before placing it back on the baking sheet.
  • Refrigerate until the chocolate has completely hardened.
  • Store in an airtight container for up to 2 weeks.

Notes

Experiment with different types of chocolate and add toppings like sea salt or chopped nuts for extra flavor. You can also freeze these for up to 2 months.
