Ingredients

Main Ingredients

  • 450 g fresh strawberries, washed and stems removed Use ripe, fresh strawberries for best flavor.
  • 250 g granulated sugar Sugar is important for the jam to set.
  • 1-2 tablespoons fresh-squeezed lemon juice Adds a hint of citrus flavor.

Instructions

Preparation

  • Sterilise your mason jar(s) in boiling water, then dry them completely and set aside.
  • Remove the tops of the strawberries and dice them into small pieces or blend them for a smoother jam.

Cooking

  • In a large pot, combine diced strawberries, lemon juice, and sugar. Stir to coat the strawberries.
  • Let the mixture sit for about 10-15 minutes to release the natural juices.
  • Turn the heat to medium-low and stir until the sugar has completely melted.
  • Simmer on low heat for 10-15 minutes, stirring frequently and gently mashing the strawberries.
  • Bring to a full rolling boil and continue boiling until it reaches 105°C (220°F), stirring constantly.
  • Remove from heat and skim off any foam from the top if desired.

Jarring and Cooling

  • Pour the jam into the prepared jar, leaving about 0.5 cm of space at the top.
  • Seal the jar and let it cool to room temperature.
  • Refrigerate until the jam firms up, and enjoy within two weeks.

Notes

For longer storage, consider freezing the jam in smaller containers. The jam can be served on toast, scones, or as a dessert topping.
