  • 450 g ground beef Choose lean ground beef for a healthier option.
  • 2 medium potatoes, diced You can use any type of potatoes.
  • 2 units carrots, sliced
  • 2 stalks celery, chopped
  • 1 can (400 g) diced tomatoes
  • 1 unit onion, chopped
  • 1 litre beef broth Vegetable broth can be used for a vegetarian version.
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley Use fresh or dried herbs.

Preparation

  • In a large pot, brown the ground beef over medium heat. Once it’s nicely browned, drain any excess fat.
  • Add the chopped onions, sliced carrots, and chopped celery to the pot. Sauté everything together until the vegetables are soft.
  • Stir in the diced potatoes and canned tomatoes, mixing well.
  • Pour in the beef broth and season with salt, pepper, and any optional herbs you desire.
  • Bring the mixture to a boil, then reduce the heat to low. Let it simmer for about 30 to 40 minutes, until the vegetables are tender.

Notes

This soup freezes beautifully! Store in an airtight container in the freezer for up to three months. For a vegetarian version, replace ground beef with lentils or canned beans and use vegetable broth.
