Instructions

Preparation

  • Line an 8x8 inch (20x20 cm) baking dish with parchment paper, leaving overhang.
  • In a large bowl, mix rolled oats, nut butter, and honey or maple syrup until blended.
  • Fold in chopped nuts, dried fruits, vanilla extract, cinnamon, and salt. Mix until combined.
  • Transfer the mixture to the prepared baking dish and press down firmly.
  • Refrigerate for at least 2 hours to set.
  • Remove from the dish using the parchment paper and cut into squares or rectangles.

Notes

These snack bars can be served plain or topped with a drizzle of extra nut butter. For a crunchier texture, toast the oats and nuts in the oven at 350°F (175°C) for 10 minutes before mixing.
