Ingredients

Cheesecake Base

  • 1 cup Greek yogurt Plain, thick, and high protein
  • 4 oz Light cream cheese Softened
  • 1 cup Chia seeds Helps the dessert hold its shape
  • 1/2 cup Milk of choice Dairy or unsweetened almond milk
  • 1 cup Raspberries Fresh or frozen
  • 2 tbsp Sweetener Honey or maple syrup to taste
  • 1 tsp Vanilla extract For flavor
  • 1 pinch Salt To enhance flavor

Crumb Layer

  • 1/2 cup Crushed graham crackers Or oats or chopped nuts

Instructions

Preparation

  • Whisk together the Greek yogurt and softened cream cheese until smooth.
  • In a separate bowl, combine chia seeds, milk, sweetener, vanilla, and salt. Let it sit for 10 minutes, whisking again to prevent clumping.
  • Once chia has thickened, mix it into the yogurt and cream cheese mixture.
  • Taste and adjust sweetness before layering.

Assembling the Jars

  • Begin with a layer of crushed graham crackers at the bottom of each jar.
  • Add a layer of the cheesecake chia mixture.
  • Top with fresh raspberries.
  • If desired, mash extra berries with a drizzle of honey and layer them on top.

Chilling

  • Cover the jars and refrigerate for at least 3-4 hours, or overnight for best texture.

Innovate by swapping fruits, reducing sugar, or freezing for a cooler treat. Allow chia to fully gel in the fridge and adjust recipes as needed to suit dietary preferences.
