Ingredients

Main Ingredients

  • 2 cups rolled oats Quick oats can be used, but rolled oats will give a better texture.
  • 1 each ripe banana, mashed Make sure it’s ripe for natural sweetness.
  • 1/2 cup almond milk
  • 1/4 cup natural peanut butter You can substitute with almond or cashew butter if preferred.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • optional chocolate chips or dried fruit For added sweetness.

Instructions

Baking Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the mashed banana, almond milk, and peanut butter, mixing until smooth.
  • Stir in the rolled oats, baking powder, and vanilla extract until fully combined.
  • If using chocolate chips or dried fruit, fold them into the mixture now.
  • Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Remove from the oven and let cool for a few minutes before transferring to a wire rack.

Notes

Make sure the banana is well-mashed to avoid chunky cookies. For a chewier texture, do not over-bake. Experiment with mix-ins like nuts or seeds to customize flavors.
