Ingredients

Dry Ingredients

Wet Ingredients

  • 2 large Eggs For structure

  • 1/3 cup Honey or maple syrup For gentle sweetness
  • 1/4 cup Milk Any kind to loosen the batter if needed
  • 1/4 cup Neutral oil Like avocado oil, light olive oil, or melted coconut oil
  • 1 tablespoon Lemon zest For fresh, tangy flavor
  • 2 tablespoons Lemon juice For fresh, tangy flavor
  • 1 teaspoon Vanilla extract To round everything out

Add-ins

  • 1 cup Blueberries Fresh or frozen; do not thaw

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the eggs, yogurt, honey or maple syrup, oil, milk, vanilla, lemon zest, and lemon juice.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; a few small lumps are fine.
  • Gently fold in the blueberries, being careful not to smash them.

Baking

  • Divide the batter evenly into the prepared muffin tin.
  • Bake for 16 to 20 minutes, or until a toothpick inserted into the center comes out clean (a little blueberry juice is okay).
  • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For sweetness, sprinkle a tiny pinch of coarse sugar on top before baking. If your lemons are low on juice, use extra zest for flavor.
