Ingredients

Dry Ingredients

  • 190 g all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 250 g plain unsweetened Greek yogurt Recommended for best results.
  • 120 g honey or maple syrup Can be substituted.
  • 60 ml freshly squeezed lemon juice
  • Zest of 2 lemons

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan.
  • In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
  • In another bowl, mix the Greek yogurt, honey (or maple syrup), lemon juice, and lemon zest until smooth.

Baking

  • Gradually fold the wet mixture into the dry ingredients, mixing gently.
  • Transfer the batter into the prepared loaf pan and smooth the top.
  • Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  • Remove from oven, let cool for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store the cake in an airtight container for up to three days at room temperature or about a week in the fridge. For an even moister loaf, add a tablespoon of apple sauce to the wet ingredients. Experiment with flavors by adding poppy seeds or blueberries.
