Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a medium bowl, mix together the nut butter, honey or maple syrup, egg, and vanilla until smooth.

Combining Ingredients

  • Add the oats, whole wheat flour, baking powder, cinnamon, and salt to the wet ingredients. Stir until no dry flour remains.
  • Fold in the diced or grated apple. If using add-ins like walnuts or raisins, add them at this stage.

Shaping and Baking

  • Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet, and gently flatten each cookie.
  • Bake for 12 to 15 minutes, until the edges are set and lightly golden.

Cooling

  • Let the cookies cool on the pan for 5 minutes, then transfer to a rack to cool completely.

Notes

For a softer cookie, grate the apple instead of dicing. If the dough feels too wet, add 1 to 2 tablespoons more oats. If it's too dry, add a splash of milk.
