Instructions

Preparation

  • Preheat oven to 350°F (175°C).
  • Line an 8x8 inch pan with parchment paper.
  • In a bowl, combine Greek yogurt, egg, maple syrup (or sugar), oil, and vanilla extract.
  • In another bowl, mix flour, protein powder (if using), baking powder, and salt.
  • Add the dry ingredients to the wet ingredients and mix until just combined.

Streusel Topping

  • In a small bowl, mix brown sugar, cinnamon, flour, and melted butter until crumbly.

Baking

  • Pour the batter into the prepared pan and sprinkle streusel topping evenly over the batter.
  • Bake for 22 to 30 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  • Let cool for at least 15 minutes before slicing.

Notes

Can add mashed banana or blueberries for flavor variations. For storage, keep in an airtight container for up to 3 days at room temperature or up to 5 days in the fridge.
