Ingredients

For the Filling

  • 6 oz Feta cheese, crumbled
  • 8 pieces Kalamata olives, pitted and chopped
  • 1/4 cup red onion, finely chopped
  • 8 pieces cherry tomatoes, chopped finely
  • 1 tbsp fresh basil, chopped
  • 1 tsp dried oregano
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For Serving

  • 1 tbsp olive oil or avocado oil to drizzle over the stuffed cucumber bites
  • 1 tbsp fresh basil or mint leaves, chopped for topping
  • 1 large cucumber about 8 inches long

Instructions

Preparation

  • In a medium mixing bowl, combine the crumbled Feta cheese, chopped Kalamata olives, finely chopped red onion, and chopped cherry tomatoes.
  • Add the fresh basil, dried oregano, lemon juice, salt, and black pepper. Toss everything together until well combined.

Making Cucumber Boats

  • Cut the cucumber in half lengthwise and scoop out the seeds and soft center with a spoon to create 'boats'.

Filling Cucumber Boats

  • Spoon the Feta mixture generously into each cucumber half, packing it in for flavor.

Serving

  • Cut each cucumber half into eight bite-sized sections widthwise.
  • Drizzle olive oil or avocado oil over the stuffed cucumber bites and top with additional chopped basil or mint leaves.
  • Serve immediately or cover and refrigerate for later.

Notes

Best served fresh but can be prepared a few hours in advance. Store filling separately if making ahead to keep cucumbers crisp.
