Ingredients

Puff Pastry

  • 2 sheets puff pastry, thawed (about 500g)

Cheese and Filling

  • 8 oz Brie cheese, sliced (about 225g)
  • 1/2 cup whole berry cranberry sauce (about 125g) Store-bought works well.
  • 1/4 cup dried cranberries (about 30g) You can substitute with thawed frozen cranberries.
  • 1/4 cup chopped pistachios (about 30g)
  • 1 tablespoon honey (about 15g) For drizzling on top before serving.

Egg Wash and Garnish

  • 1 whole egg, beaten (for egg wash)
  • 1 sprig fresh thyme, for garnish
  • as needed Flour, for dusting

Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out both sheets of puff pastry on a lightly floured surface and cut each into two large triangles.

Assembly

  • On one triangle, spread a layer of cranberry sauce, then add Brie slices, sprinkle dried cranberries, and top with chopped pistachios.
  • Place the second triangle on top of the first and seal the edges by pressing them together.
  • Slice horizontal strips along both sides to create branches for the tree and gently twist each strip.

Baking

  • Brush the entire pastry lightly with beaten egg wash and bake in the preheated oven for 20-25 minutes until puffed and golden.

Serving

  • Once baked, drizzle with honey, garnish with fresh thyme and extra chopped pistachios, and serve warm.

Notes

You can assemble the pastry a few hours in advance and refrigerate. Reheat leftovers in a 350°F oven for 8-10 minutes. Feel free to experiment with different cheeses or nuts.
