Golden Baked Feta Rolls with Sweet Cranberry Honey

Ingredients

For the filling

  • 8 sheets phyllo or puff pastry
  • 8 oz feta cheese 225 g
  • 2 tbsp butter, melted 30 ml
  • 2 tbsp honey 30 ml
  • 1/4 cup chopped cranberries 40 g
  • 1 tsp lemon zest 5 g
  • 1 tbsp parsley, chopped for garnish

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine the chopped cranberries and lemon zest. Mix well to release the beautiful citrus fragrance.
  • Crumble the feta cheese into the cranberry mixture and stir until combined.
  • Take one sheet of phyllo or puff pastry and brush it lightly with the melted butter. Place another layer on top and repeat until you have a stack of two sheets.
  • Spoon a generous amount of the feta and cranberry mixture along one edge of the pastry. Roll it up tightly, tucking in the sides as you go to seal the filling inside. Repeat with the remaining pastry and filling.
  • Arrange the rolls on a baking sheet lined with parchment paper and brush the tops with any remaining melted butter.

Baking

  • Bake for 20–22 minutes, or until the rolls are golden brown and puffed up.
  • While the rolls are baking, warm the honey in a small saucepan over low heat.
  • Once out of the oven, drizzle the warm honey over the rolls and sprinkle with fresh parsley before serving.

Notes

Serve warm for the best flavor and texture. Pair with a crisp salad or a plate of olives and nuts for a Mediterranean-themed spread. Great with white wine or sparkling water with lemon slices. Keep phyllo sheets covered while working to prevent drying out. Mix feta with cream cheese or goat cheese for variations. Can be made ahead and stored in the fridge.
