Ingredients

For the Rolls

  • 8 sheets phyllo pastry (or puff pastry), thawed if frozen Phyllo gives a crispy texture, while puff pastry results in a flakier bite.
  • 8 oz feta cheese, cut into 8 small rectangles Choose a high-quality feta for the best flavor.
  • 2 tablespoons butter, melted (for brushing)
  • 2 tablespoons honey (for drizzling) Can substitute with maple syrup or agave nectar.
  • 1/4 cup dried cranberries, chopped Can substitute with raisins or chopped dried apricots.
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

Preparation

  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a small bowl, combine the chopped dried cranberries and lemon zest, mixing well.

Assembly

  • Lay a sheet of phyllo pastry flat on a clean surface. Brush it gently with melted butter using a pastry brush.
  • Place a block of feta cheese at the bottom edge of the phyllo sheet. Add a pinch of the cranberry-lemon mixture on top of the feta.
  • Carefully roll the phyllo tightly around the feta, folding in the sides as you go to seal in the filling. Ensure the seam is on the bottom when placed on the baking sheet.
  • Repeat the process with the remaining phyllo sheets and filling until all ingredients are used.
  • Brush the tops of the rolled feta with additional melted butter before placing the baking sheet in the oven.

Baking

  • Bake for 20 to 22 minutes, or until the pastry is golden brown and crisp.
  • Warm the honey slightly and drizzle it over the baked rolls before serving. Optionally, sprinkle with chopped parsley for garnish.

Notes

Keep unused phyllo dough covered with a damp cloth to prevent it from drying out. If using puff pastry, roll it out slightly to make it thinner for easier wrapping. Consider adding crushed nuts for an extra crunch and flavor dimension. Pair these rolls with a dipping sauce, such as a yogurt garlic dip, for added flavor.
