Ingredients

Potato Mixture

  • 1.5 pounds baby potatoes, halved These little gems are ideal because they cook quickly and have a creamy texture.
  • 3 tablespoons melted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese Freshly grated cheese melts and tastes better than pre-grated versions.
  • 1 tablespoon fresh parsley, chopped
  • 0.5 teaspoon dried Italian seasoning

Instructions

Preparation

  • Preheat your grill to medium-high heat.
  • In a mixing bowl, combine the halved baby potatoes, melted butter, olive oil, minced garlic, grated Parmesan, chopped parsley, Italian seasoning, salt, and pepper. Toss until all the potatoes are well coated.
  • Cut a large piece of aluminum foil, about 18 inches long. Place half of the potato mixture onto the center of the foil sheet.
  • Fold the foil over the potatoes to create a sealed packet, making sure it's tightly closed to trap steam while cooking.
  • Repeat with the remaining potato mixture to create a second packet.

Cooking

  • Place the foil packets on the grill and cook for 20 to 25 minutes, turning once halfway through. They’re done when the potatoes are fork-tender.
  • Carefully open the foil packets (watch out for hot steam) and sprinkle with extra Parmesan just before serving.

Notes

These potatoes are great served alongside grilled meats or fish. For extra inspiration, consider adding different herbs or seasonings.
