  • 2 cans (15 oz each / 425 g each) chickpeas
  • 1 large potato cut into small pieces (6 oz / 180 g)
  • 2 cups vegetable broth (480 ml, low-sodium)
  • Salt and black pepper to taste

  • Start by pouring one can of chickpeas, including its liquid, into a blender. Blend until you achieve a smooth purée. Set this aside as it will form the creamy base of your soup.
  • In a medium-sized pot, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute, or until it becomes fragrant and begins to release its aroma.
  • To the pot with sautéed garlic, add the puréed chickpeas, the second can of drained chickpeas, cubed potato, paprika, rosemary, thyme, chili flakes, and freshly cracked pepper. Stir everything together to combine.
  • Pour in the vegetable broth and give it another good stir to ensure all elements are incorporated.
  • Place a lid on the pot. Increase the heat to medium-high to bring the soup to a boil.
  • Once it is boiling, reduce the heat to medium-low and allow the soup to simmer gently for about 25 minutes. Stir occasionally to prevent sticking and to blend the flavors nicely.
  • After 25 minutes, taste the soup and adjust the seasoning to fit your preference, keeping in mind the salt content of your broth. You might want to add about 1/4 teaspoon of salt.
  • Serve the soup hot, garnished with freshly ground pepper and a drizzle of olive oil, if desired. Enjoy it with a piece of crusty bread for dipping to enhance the experience.
