Ingredients

Main Ingredients

  • 2 cups Greek yogurt, plain or vanilla Full fat is creamier, but use your preferred type.
  • 1 cup Strawberries, sliced thin Fresh is best, but frozen can work if thawed and blotted dry.
  • 0.5 cups Pistachios, roughly chopped Roasted and lightly salted are recommended.
  • 1-3 tablespoons Honey or maple syrup Adjust based on desired sweetness.
  • 1 splash Vanilla extract Optional for added dessert flavor.
  • 1 pinch Salt Helps enhance sweetness.

Instructions

Preparation

  • Line a baking sheet with parchment paper, ensuring it lays flat.
  • In a large bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract.
  • Spread the yogurt mixture evenly on the prepared baking sheet.
  • Evenly distribute the sliced strawberries and chopped pistachios over the yogurt mixture, gently pressing them in.
  • Sprinkle a pinch of salt on top.
  • Freeze for at least 3 hours, but overnight is ideal.

Serving

  • Once fully frozen, remove from the freezer and let sit for 2 minutes.
  • Break the bark into pieces by hand.
  • Store any leftovers in a freezer bag with parchment between layers.

Notes

For best results, dry the strawberries before adding them to the yogurt to avoid icy patches. Use full-fat yogurt for a creamier texture, and don't cut the bark; break it into pieces by hand for cleaner edges.
