  • 1 to 2 teaspoons vanilla extract Adjust based on taste preference.
  • Pinch salt Especially if your peanut butter is unsalted.
  • 1 to 2 tablespoons powdered peanut butter Optional for thicker texture.

Instructions

Preparation

  • Line a small baking dish with parchment paper. An 8 by 8 pan is great for thicker bars, or a loaf pan for extra thick slices.
  • In a bowl, stir Greek yogurt, peanut butter, vanilla, and salt until smooth. Adjust thickness with powdered peanut butter or yogurt as needed.
  • Pour and spread the mixture into the pan. Smooth the top with a spatula.
  • If desired, drizzle melted chocolate over the top or sprinkle toppings and press them in.
  • Freeze for at least 3 to 4 hours until firm; overnight is optimal.
  • Slice into bars while fully frozen, let sit for 2 to 3 minutes before serving for a creamier texture.

Notes

Use thick Greek yogurt for best results and keep bars in the back of the freezer to avoid temperature changes that affect texture.
