  • 2 tbsp Honey or maple syrup Can use sugar-free syrup.

  • 1 pinch Salt Enhances sweetness.

Topping Ingredients

  • 1 cup Berries (blueberries, raspberries, sliced strawberries) Fresh or frozen; dry frozen fruits before using.

Optional Ingredients

  • 1 tbsp Lemon zest For added brightness.
  • 2 tbsp Mini chocolate chips For a sweeter treat.
  • 2 tbsp Chopped almonds For added crunch.

Instructions

Preparation

  • Line a small baking sheet or plate with parchment paper.
  • Blend cottage cheese in a blender or food processor until smooth, scraping down sides as needed.
  • Add honey (or maple syrup), vanilla, and a pinch of salt. Blend again until well combined.
  • Spread the mixture onto the parchment in a thin layer, about 1/4 inch thick.
  • Sprinkle berries on top, gently pressing them in.
  • Freeze until solid, approximately 2 to 3 hours. Then break into pieces.

Notes

Store in an airtight container with parchment between layers to prevent sticking. Best if consumed within 2 weeks for optimal flavor and texture.
