  • 1 cup fresh cranberries, chopped (100 g)
  • 1 cup all-purpose flour (120 g)
  • 1/2 cup sugar (100 g)
  • 1/2 cup buttermilk (120 ml)
  • 1/4 cup unsalted butter, melted (60 ml)
  • 1 large egg
  • 1 tablespoon orange zest
  • 1/2 cup chopped pecans (60 g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 375°F (190°C) and grease a muffin tin.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, melted butter, egg, and orange zest.
  • Pour the wet ingredients into the dry ingredients and mix until just combined; be careful not to overmix!
  • Gently fold in the cranberries and chopped pecans to the batter.
  • Divide the batter evenly among the muffin cups, filling each cup about two-thirds full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool slightly before serving them warm.

Notes

For an even more delightful experience, serve these muffins warm with a pat of butter or cream cheese spread on top. They can also be garnished with whipped cream and additional orange zest for a special dessert option. Store any leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
