Ingredients

Wet Ingredients

  • 1 cup plain yogurt Using plain yogurt is ideal, but Greek yogurt can be used for a richer texture.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil You can replace half of the oil with unsweetened applesauce for a lighter texture.
  • 1 teaspoon vanilla extract
  • zest of one lemon Optional for added flavor.

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the yogurt, sugar, and eggs. Whisk until smooth.
  • Add the vegetable oil and vanilla extract, mixing until fully incorporated.
  • In a separate bowl, whisk together the flour and baking powder.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Pour the batter into a greased baking dish.

Baking

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
  • Allow the cake to cool in the pan before serving.

Notes

To ensure a tender cake, avoid over-mixing once you combine wet and dry ingredients. Serve with fresh fruit or a sprinkle of powdered sugar for added sweetness. Store leftover cake in an airtight container at room temperature for up to three days.
