Instructions

Preparation

  • Peel, core, and slice the apples very thinly. Use a mandoline for uniform slices and set aside in a large bowl.
  • In another bowl, whisk the eggs with both granulated and brown sugars until light and fluffy.
  • Pour in the melted butter, milk, and vanilla extract. Mix until combined.
  • Sift in the flour, baking powder, and a pinch of salt. Whisk until a smooth batter forms.
  • Gently fold the apple slices into the batter, ensuring they are well-coated.
  • Preheat your oven to 175°C (350°F) and grease and line a loaf or square pan with parchment paper.

Baking

  • Transfer the apple mixture into the prepared pan, pressing lightly to arrange the apples in layers.
  • Sprinkle sliced almonds over the top of the mixture.
  • Bake in the oven for 45-50 minutes, or until the top is golden brown and the cake feels set.

Serving

  • Allow the cake to cool completely in the pan before dusting with powdered sugar and slicing.
