Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine tahini, maple syrup (or honey), egg, and vanilla extract. Mix until the mixture is glossy and smooth.
  • Sprinkle in the baking soda and salt, and mix until just combined.
  • Fold in the chocolate chips last.
  • Let the dough sit for 5 minutes to thicken slightly.

Baking

  • Using a cookie scoop, drop tablespoons of the dough onto the prepared baking sheet, spacing them a few inches apart.
  • Bake in the preheated oven for 12 to 15 minutes, or until the edges are set but the centers look slightly soft.
  • Cool the cookies on the baking sheet for at least 10 minutes before transferring to a wire rack.

Notes

Flourless cookies can feel fragile after baking, so always cool them fully before stacking or freezing. They are best enjoyed after a day when the tahini flavor has settled in.
