  • 1 cup sunflower butter Use smooth sunflower butter for best texture.
  • 1/3 cup honey or maple syrup Maple syrup can be used for a vegan version.

  • 1/3 cup sunflower seeds Optional for added crunch.
  • 1/3 cup mini chocolate chips Optional, can be replaced with dried fruits.

Preparation

  • Line an 8x8 pan with parchment paper, leaving some overhang for lifting the bars out later.
  • Warm the sunflower butter and honey together in the microwave for 15-20 seconds to make them easier to mix. Do not heat too much; just enough to loosen them.
  • Stir in the vanilla extract and salt.
  • Fold in the rolled oats, sunflower seeds, and mini chocolate chips.
  • Press the mixture firmly into the prepared pan, using the bottom of a measuring cup to press it down.
  • Chill in the refrigerator for at least 2 hours before slicing into squares.

Notes

For an extra treat, melt chocolate and drizzle on top or sprinkle with flaky salt before chilling. These bars keep well in the fridge for about a week, and can be frozen for up to 2-3 months. Cut them into smaller squares for a quick bite or larger rectangles for a breakfast bar.
