  • 3 pieces ripe pears, peeled or unpeeled, sliced Choose ripe but firm pears.
  • 2 cups almond flour
  • 3 large eggs
  • 1/2 cup sugar or coconut sugar
  • 1/4 cup melted butter or neutral oil Can be substituted with coconut oil.
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 pinch cinnamon (optional) For added flavor.

Instructions

Preparation

  • Heat your oven to 350°F. Put your skillet in the oven while it heats for about 5 minutes, then carefully pull it out and grease it well.
  • Slice your pears. If they are super juicy, pat them with a paper towel.
  • In a bowl, whisk eggs and sugar until it looks a little lighter. Add vanilla and melted butter, then whisk again.
  • Stir in almond flour, baking powder, and salt. The batter will be thick.
  • Spread batter into the warm skillet. Arrange pear slices on top in any pattern you like and press them in slightly.
  • Sprinkle with cinnamon or sliced almonds if desired.

Baking

  • Bake for 35 to 45 minutes, until edges are set and lightly golden.
  • Cool for at least 20 minutes before slicing.

Notes

Tip: Serve warm with whipped cream or a drizzle of honey for added decadence. This cake can be made ahead of time; it stores well in the fridge and tastes great the next day.
