Main Ingredients

  • 1 cup natural peanut butter (stirred well) Main flavor, healthy fats, helps texture
  • 1 large egg Binds the dough, helps chewiness
  • 1/3 cup maple syrup or honey Sweetness and moisture
  • 1/2 cup protein powder Vanilla is great, chocolate is also amazing
  • 1/2 tsp baking soda For leavening
  • 1/2 tsp vanilla extract
  • pinch salt Skip if your peanut butter is very salty
  • 1/3 cup chocolate chips or chopped peanuts Optional add-in

Instructions

Preparation

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • In a bowl, mix peanut butter, egg, maple syrup (or honey), and vanilla until smooth.
  • Stir in protein powder, baking soda, and salt. The dough should look thick and scoopable. If it feels too dry, add 1 to 2 teaspoons of water. If it feels too wet, add 1 tablespoon more protein powder.
  • Scoop into 10 to 12 cookies. Roll into balls and gently press them down with your fingers or a fork.
  • Bake for 8 to 10 minutes. They will look slightly underdone in the center, which is perfect.
  • Let them cool on the baking sheet for 10 minutes to help them set.

Notes

Do not overbake. Let the cookies cool before serving to help them hold together better. You can also experiment with different mix-ins for varied flavors.
