Macaroon Base

  • 3 cups Unsweetened shredded coconut Ensure the coconut is not too dry.
  • 3 large Egg whites Will hold the mixture together.
  • 1/2 cup Honey Acts as the sweetener.
  • 2 tablespoons Lemon zest Essential for flavor.
  • 2 tablespoons Lemon juice Enhances the lemon flavor.

  • 1 pinch Salt Balances sweetness.

Instructions

Preparation

  • Preheat your oven to 325°F (163°C).
  • Line a baking sheet with parchment paper.
  • In a bowl, mix shredded coconut, lemon zest, salt, and optional vanilla.
  • Add honey and lemon juice and stir until evenly mixed.
  • Add egg whites and stir until the mixture is sticky and holds together.
  • Scoop the mixture into small mounds, about 1 to 1.5 tablespoons each, and press them slightly.
  • Bake for about 16 to 20 minutes, until tops and edges are lightly golden.
  • Allow cooling on the pan for 10 minutes before transferring to a rack to cool completely.

Notes

Store macaroons in an airtight container. They can last at room temperature for 3 days, in the fridge for up to a week, and in the freezer for 2 months. Keep a piece of parchment paper between layers to avoid sticking.
