Ingredients

For the Bites

  • 1.5 cups plain Greek yogurt (full fat for best texture)
  • 0.25 cups unsweetened cocoa powder
  • 3-5 tablespoons honey or maple syrup Start with 3 tablespoons, then taste and adjust.
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Optional Toppings

  • 0.5 cups melted dark chocolate for dipping Mix in 1 to 2 teaspoons coconut oil to help it coat smoothly.

Instructions

Preparation

  • In a medium bowl, stir together the Greek yogurt, cocoa powder, honey or maple syrup, vanilla, and salt until smooth and evenly mixed.
  • Taste and adjust sweetness as preferred, remembering that freezing will dull sweetness.
  • Line a baking sheet or plate with parchment paper. Using a small cookie scoop or spoon, drop mounds of the mixture onto the parchment, aiming for about 1 tablespoon each.
  • Freeze the mounds for at least 2 hours, or until solid.

Optional Chocolate Dip

  • If desired, melt chocolate gently in a microwave-safe bowl, stirring in short bursts.
  • Dip each frozen bite into the melted chocolate and return to the parchment paper.
  • Freeze again for 15 to 20 minutes until the chocolate sets.

Notes

These bites keep well in a sealed container or freezer bag with parchment between layers for about 2 to 3 weeks. You can customize by adding mini chocolate chips, nuts, or fruits.
