  • 1/2 cup Unsweetened cocoa powder Choose a cocoa you enjoy.
  • 1/2 cup Almond butter Cashew butter can be used as a substitute.
  • 1 tsp Vanilla extract Enhances chocolate flavor.
  • 1 pinch Salt Enhances chocolate flavor.
  • 1/2 cup Dark chocolate chips or chopped dark chocolate Optional for extra richness; choose a refined sugar-free option.

Instructions

Preparation

  • Pit the dates and place them in a food processor. Pulse until they resemble sticky crumbs.
  • Add cocoa powder, almond butter, vanilla extract, and salt. Pulse until the mixture forms a thick dough that clumps together.
  • If the mixture is too dry, add one teaspoon of water at a time until it reaches the right consistency.
  • If too sticky, add a little more cocoa powder or ground almonds.
  • Stir in dark chocolate pieces, if using, so they remain chunky.
  • Roll the mixture into bite-sized balls or bites.
  • Chill in the refrigerator for at least 30 minutes to firm up.

Finishing Touches

  • Optionally roll in cocoa powder, shredded coconut, or chopped nuts for extra flavor and texture.

Notes

These brownie bites can be stored in the fridge for up to a week or frozen for longer. Let frozen bites sit out for a few minutes before eating.
