  • 2 cups rolled oats Quick oats can be substituted.
  • 1 cup almond butter Smooth is easiest to mix. Peanut butter changes flavor.
  • 2 large eggs Holds ingredients together; for egg-free use a tested swap.
  • 1/4 cup honey or maple syrup Maple syrup is softer and more mellow.
  • 1 cup cherries Dried preferred; if frozen, thaw and blot well.
  • 1 teaspoon almond extract Can substitute with vanilla extract.
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup sliced almonds Optional, for crunch.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, mix together the rolled oats, almond butter, eggs, honey or maple syrup, cherries, almond extract, salt, and cinnamon until thoroughly combined.
  • Fold in the sliced almonds if using.
  • Press the mixture firmly into the prepared baking pan.

Baking

  • Bake in preheated oven for 25-30 minutes, or until the edges are lightly golden and the center is set.
  • Allow to cool in the pan for at least 10 minutes before transferring to a wire rack to cool completely.

Storage

  • Store in an airtight container at room temperature for up to 3 days, in the fridge for up to 7 days, or freeze for up to 2 months.

Notes

Press the mixture firmly into the pan to ensure the squares hold together. Baking until edges are lightly golden avoids toughness in the center.
