  • 2 cups cottage cheese (full fat or low fat) Full fat provides the creamiest texture.
  • 3 large eggs
  • 1/3 cup honey or maple syrup Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Plus a little zest if available.
  • 1/3 cup oat flour or cornstarch Oat flour is optional; cornstarch can be used for structure.
  • 1.5 cups blueberries (fresh or frozen)
  • 1 pinch salt

Instructions

Preparation

  • Preheat your oven to 350 degrees F.
  • Blend the cottage cheese, eggs, honey or maple syrup, vanilla extract, lemon juice, zest (if using), salt, and cornstarch or oat flour in a blender until creamy.

Baking

  • Pour the blended mixture into a lined 8x8 inch baking dish.
  • Fold in most of the blueberries and sprinkle the remainder on top.
  • Bake for 35 to 45 minutes, depending on your dish and thickness, until the edges are set and the center has a gentle jiggle.
  • Cool on the counter, then chill for at least 2 hours before slicing for clean pieces.

Notes

This bake is even better after chilling and can be stored in the fridge for up to 4 days. It can also be microwaved for a quick warm-up. For storage, let it cool fully before covering or transferring to an airtight container.
