  • 4 large large potatoes, peeled and cubed
  • 2 large large onions, thinly sliced
  • 3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 2 cups water
  • to taste Salt

Preparation & Cooking

  • Heat the oil in a pot over medium heat. Add the cumin seeds and fry for a few seconds until they become fragrant.
  • Next, add the sliced onions to the pot and sauté them until they turn golden brown.
  • Stir in the turmeric, coriander powder, and salt. Cook for about 2 minutes until the spices are well combined.
  • Add the cubed potatoes to the pot and mix everything together thoroughly.
  • Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat, cover the pot, and let it simmer until the potatoes are tender (about 20 minutes).
  • After the potatoes are cooked, stir in the garam masala and let it cook for an additional 5 minutes to allow the flavours to meld.
  • Garnish the dish with fresh coriander before serving warm.

Notes

Customise your spice level by adding red chilli powder or green chillies. You can include extra veggies like peas, carrots, or bell peppers for added nutrition. This dish can be made ahead of time and tastes even better the next day.
