Ingredients

Dry Ingredients

  • 4 dl wheat flour (about 1.6 cups)
  • 2 cups sugar
  • 1 tbsp light syrup (or corn syrup)
  • 1 tsp bicarbonate (baking soda)
  • 3/4 cup oatmeal

Wet Ingredients

  • 200 g butter or margarine (soft and at room temperature, about 0.9 cups)
  • 1 tbsp water

Add-ins

  • 1 bag cranberries (optional)
  • 250 g white chocolate (about 9 oz)

Instructions

Preparation

  • Preheat the oven to 200 degrees Celsius (about 400 degrees Fahrenheit).
  • In a large bowl, mix together the wheat flour, sugar, light syrup, bicarbonate, water, oatmeal, butter, and cranberries (if using) until everything is combined into a firm dough.
  • Shape the dough into round balls and flatten them on a baking sheet, making each cookie about 5 cm (2 inches) in diameter. Alternatively, you can divide the dough into two rolls, wrap them in plastic wrap, and refrigerate for 30 minutes. Once chilled, cut the dough into cookies about 0.5 cm thick.

Baking

  • Bake the cookies in the middle of the oven for 6-7 minutes, or until they are golden brown.

Finishing Touches

  • While the cookies are baking, prepare the white chocolate by melting it. Allow the cookies to cool after baking.
  • Once cool, dip half of each cookie in the melted white chocolate and return them to the baking sheet.
  • Finally, let the cookies cool and set until the chocolate hardens.

Notes

The best way to enjoy Farmer's Cookies is with a tall glass of milk or a hot cup of coffee. They also pair wonderfully with tea for an afternoon treat. Consider adding chopped nuts or spices for variation, and store in an airtight container.
