Ingredients

Casserole Filling

  • 2 cups cooked chicken, shredded You can use leftover chicken or rotisserie chicken.
  • 240 g mixed vegetables (carrots, peas, corn) Frozen or fresh mixed vegetables can be used.
  • 1 can cream of chicken soup (295 g) Can substitute with homemade white sauce or other cream soup.
  • 240 ml chicken broth Low-sodium broth is a good option.
  • 240 ml milk Any variety of milk will work.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme Fresh thyme can be substituted for more flavor.
  • to taste Salt and pepper Adjust according to personal preference.

Crust

  • 1 package refrigerated pie crusts or biscuit dough Use store-bought for easy preparation.

Instructions

Preparation

  • Preheat your oven to 220°C (425°F).
  • In a large bowl, combine the shredded chicken, mixed vegetables, cream of chicken soup, chicken broth, and milk. Add the garlic powder, onion powder, thyme, salt, and pepper, mixing it all until well combined.
  • Spread the mixture evenly into a baking dish, ensuring it’s level.
  • Cover the filling with the pie crusts or biscuit dough, sealing the edges well to contain the goodness inside.
  • Using a knife, cut slits in the crust for steam to escape during baking.

Baking

  • Bake in the preheated oven for 30-35 minutes or until the crust is a beautiful golden brown.

Serving

  • Allow the casserole to cool slightly before serving, as it will be hot!
  • Serve warm with generous portions alongside a fresh garden salad, steamed green beans, or creamy mashed potatoes.

Notes

Make the casserole a day in advance and store in the fridge until ready to bake. You may need to add a few extra minutes to baking time if baked straight from the fridge. Feel free to swap the mixed vegetables for favorites like broccoli, diced potatoes, or mushrooms.
