  • 500 grams uncooked rice (about 2 cups)
  • 30 milliliters olive oil (about 2 tablespoons)
  • 30 grams butter (about 2 tablespoons)
  • 1 medium onion, thinly sliced
  • 2.5 milliliters salt (about 1/2 teaspoon)
  • 2.5 milliliters ground black pepper (about 1/2 teaspoon)
  • 3 cloves garlic, minced
  • 15 grams minced fresh ginger (about 1 tablespoon)
  • 50 grams sliced blanched almonds (about 1/3 cup)
  • 2.5 milliliters ground nutmeg (about 1/2 teaspoon)
  • 125 grams chopped roasted red bell pepper (about 1/2 cup)
  • 15 grams chopped fresh parsley (about 1/4 cup)

Instructions

Cooking Steps

  • Cook the rice according to package instructions and set it aside to cool.
  • In a large skillet over medium heat, melt the butter and olive oil together. Add the sliced onion and season it with salt and pepper. Fry until the onion is browned and crisp.
  • Stir in the minced garlic and ginger, cooking for 2-3 minutes until they are fragrant.
  • Add the sliced blanched almonds to the skillet and cook for another 2 minutes, then transfer the mixture to a plate.
  • In the same skillet, add the cooked rice and sprinkle in the ground nutmeg, stirring until the rice is fully reheated.
  • Return the onion and almond mixture to the skillet, along with the chopped roasted red bell pepper and parsley. Toss everything together and heat it through for 2-3 minutes.
  • Serve on a platter and garnish with extra parsley for a fresh touch.

Notes

Make it Ahead: You can prepare the rice a day in advance. Just stir in the other ingredients on the day of serving to maintain freshness. Add More Veggies: Feel free to throw in some frozen peas or sautéed mushrooms for extra flavor and nutrition! Spice It Up: If you love some heat, consider adding a pinch of red pepper flakes or some sautéed chili peppers to the mix.
