Ingredients

For the granola cups

  • 1 cup rolled oats
  • 1/2 cup nuts or seeds (e.g., almonds, sunflower seeds) Choose your favorite nuts or seeds.
  • 1/4 cup honey or maple syrup Can be adjusted to taste.
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

For the filling

  • 1 cup yogurt (Greek or non-dairy)
  • 1 cup mixed fresh fruit (e.g., berries, banana, kiwi) Use seasonal fruits based on your preference.

Instructions

Preparation

  • Preheat your oven to 180°C (350°F).
  • In a large bowl, mix the rolled oats, nuts or seeds, honey or maple syrup, melted coconut oil, vanilla extract, and cinnamon until everything is well combined.
  • Grease a muffin tin and press the mixture firmly into each cup to form small granola cups.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until they turn golden brown.
  • Remove the muffin tin from the oven and allow the granola cups to cool completely in the tin before taking them out.

Serving

  • Once cooled, fill each granola cup with a generous spoonful of yogurt and top with your choice of fresh fruit.
  • Serve immediately or store any leftovers in an airtight container for later enjoyment.

Notes

These granola cups can be made in advance and stored for a quick breakfast or snack. Feel free to experiment with your favorite nuts, seeds, or dried fruits. For a dairy-free option, use coconut yogurt or almond yogurt.
