Ingredients

Dry Ingredients

  • 250 g gluten-free flour (Robin Hood brand recommended)
  • 10 g baking powder
  • 1/4 tsp salt a pinch

Wet Ingredients

  • 1 large egg (roughly 60 ml)
  • 300 ml water starting with 150 ml, adjust as necessary
  • 120 ml pork lard or vegetable oil (for frying)

Instructions

Preparation

  • Combine the gluten-free flour blend, baking powder, and salt in a stand mixer or a large bowl.
  • Add the egg and 150 ml of water to the dry mixture, combine until you have a sticky dough.

Cooking

  • Heat the pork lard or oil in a cast-iron skillet over medium heat.
  • Scoop out equal portions of the dough and form small rounds in the hot oil. Flatten the balls slightly with the back of the spoon.
  • Cook until golden brown on one side, then carefully flip and brown the other side, adjusting the heat as necessary.
  • Transfer the cooked bannock to a plate lined with paper towels to drain excess oil.

Serving

  • Serve warm, optionally with butter, honey, jam, or dip.

Notes

Bannock can be stored in an airtight container at room temperature for a couple of days. For longer storage, freeze and reheat when needed. Monitor the heat of the frying oil to prevent burning or excess absorption of oil.
