  • 1/2 cup 1/2 cup finely chopped or shredded cheese (about 60 g) Any cheese can be used, such as cheddar or feta.
  • 1/2 cup 1/2 cup diced meat (like cooked chicken or turkey, about 75 g) Meat is optional; can be replaced with more veggies.
  • 1/2 teaspoon 1/2 teaspoon garlic powder
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1/4 teaspoon 1/4 teaspoon pepper

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
  • In a large mixing bowl, whisk together the eggs and milk until well combined.
  • Add your diced vegetables, cheese, and meat to the egg mixture. Sprinkle in the garlic powder, salt, and pepper. Mix until everything is well incorporated.
  • Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.

Cooking

  • Bake for 20 to 25 minutes, or until the centers are set and the tops are lightly golden.
  • Allow the egg bites to cool for a few minutes before carefully removing them from the pan.
