Main Ingredients

  • 450 g mixed seafood (fish, shrimp, scallops) Feel free to mix and match based on availability.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 500 ml vegetable broth
  • 240 ml heavy cream

Seasoning and Garnish

  • 2 tablespoons butter For sautéing
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation

  • In a large pot, melt the butter over medium heat. Once melted, add the chopped onion and minced garlic. Sauté until fragrant, about 3-4 minutes.
  • Add diced potatoes and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  • Stir in mixed seafood and cook until just done, about 5-7 minutes. Seafood should be opaque and firm.
  • Pour in heavy cream and season with salt and pepper to taste. Mix well and simmer for another 5 minutes for flavours to meld.

Serving

  • Serve hot, garnished with fresh parsley.
  • Pair with crusty bread or a green salad for a complete meal.
  • Consider serving in hollowed-out bread bowls for a whimsical touch.

Notes

For extra nutrition, add chopped carrots or celery when sautéing the onions and garlic. Chowder can be stored in an airtight container in the fridge for up to 2 days. Reheat gently on the stove.
