  • 3 cups grated zucchini about 450 grams
  • 1 cup all-purpose flour 120 grams
  • 1 cup chopped onion about 150 grams
  • 1/2 cup melted butter 115 grams
  • 4 pieces eggs
  • 1/2 to 1 1/2 cups grated cheese (Parmesan, Cheddar, or Swiss) 50 to 150 grams
  • 1 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp seasoned salt
  • 1/2 tsp dried oregano
  • 1 tbsp minced garlic
  • 2 tbsp chopped fresh parsley

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9 by 13 inch (3 quart) baking dish.
  • In a large bowl, mix together the grated zucchini, chopped onion, flour, melted butter, eggs, and your choice of cheese.
  • Add baking powder, salt, pepper, seasoned salt, oregano, garlic, and parsley. Stir until well combined.
  • Pour the mixture into the prepared baking dish.

Cooking

  • Bake for 30 to 35 minutes, or until the center is set and the edges are lightly browned.

Notes

This casserole can be stored in the fridge for up to 4 days. Reheat in the oven or microwave. Feel free to add spices like chili flakes for a kick or diced bell peppers for extra texture. You can also switch up the cheese types based on your preference or add cooked ground turkey or chicken for a meatier version.
