Ingredients

For the Puff Pastry

  • 1 large Egg
  • 1 tbsp Water
  • 7 oz Almond Paste approximately 200 grams, see recipe below for homemade almond paste
  • 1 sheet Puff Pastry thawed if frozen
  • 1/4 cup Sliced Almonds about 30 grams
  • 1 1/2 cups Raw Almonds approximately 150 grams
  • 1 1/2 cups Powdered Sugar about 180 grams
  • 1 large Egg White from a large egg
  • 1 1/2 tsp Almond Extract
  • 1/4 tsp Sea Salt
  • 1/4 cup Coconut Sugar or Regular Sugar 50 grams
  • 2 tsp Pure Vanilla Extract
  • 1/2 cup Powdered Sugar extra for dusting, about 60 grams

For the Homemade Almond Paste

  • 1 1/2 cups Raw Almonds soaked and peeled
  • 1 1/2 cups Powdered Sugar plus additional for dusting
  • 1-2 tbsp Water as needed
  • 1/2 tsp Almond Extract

Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roll out the puff pastry on a lightly floured surface to expand it a bit. Cut it into squares or rectangles, depending on your preference.
  • In a bowl, mix together the almond paste, 1 1/2 cups powdered sugar, egg white, almond extract, sea salt, coconut sugar, and vanilla extract until well combined.
  • Place a tablespoon of the almond mixture in the center of each puff pastry square. Fold the pastry over to create a triangle or rectangle and seal the edges by pressing down with a fork.

Baking

  • In a small bowl, whisk together the egg and water. Brush this mixture over each pastry for a beautiful golden finish.
  • Sprinkle the sliced almonds on top of the pastries.
  • Place the pastries on the prepared baking sheet and bake for 20-25 minutes, or until they are puffed and golden brown.

Finishing

  • Let the pastries cool for a few minutes on a wire rack. Dust with the extra powdered sugar before serving.

Notes

Serve warm for the best flavor. You can garnish with fresh berries or a drizzle of chocolate sauce.
