  • 4 cups fresh apricots, pitted and chopped
  • 2 cups granulated sugar Adjust sweetness as per preference
  • 1/4 cup lemon juice
  • 1 piece vanilla bean, split and scraped
  • 1/2 teaspoon ground cardamom Can be substituted with cinnamon

Preparation

  • In a large pot, combine the chopped apricots, sugar, and lemon juice. Stir well to ensure the sugar is fully coating the fruit.
  • Next, add the split vanilla bean pod along with its scraped seeds and the ground cardamom.
  • Bring the mixture to a boil over medium-high heat, stirring constantly to prevent sticking.
  • Once boiling, reduce the heat to medium-low and let it simmer, stirring occasionally, for about 20-30 minutes until it thickens.
  • After simmering, remove the vanilla bean pod.
  • Using a ladle, carefully pour the hot jam into sterilised jars, leaving about a 1/4 inch headspace at the top.
  • To seal the jars, process them in a boiling water bath for 10 minutes.
  • Finally, let the jars cool completely on a wire rack before storing them away.

Notes

Adjust the sweetness if desired, and ensure jars are well sterilised to prolong shelf life. Store in a cool, dark place.
