  • 1/2 cup dried cherries, chopped Can be replaced with other dried fruits like cranberries or raisins.
  • 1/2 cup dark chocolate, chopped For a less intense chocolate flavor, semi-sweet chocolate can be used.

Instructions

Preparation

  • In a large mixing bowl, whip the softened butter and powdered sugar together until light and fluffy.
  • Incorporate the vanilla extract, mixing until fully combined.
  • In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt.
  • Gradually blend the dry mixture into the butter and sugar mixture, stirring gently until just combined.
  • Carefully fold in the chopped dried cherries and dark chocolate.
  • Divide the cookie dough in half, shape into logs, wrap in plastic wrap, and refrigerate for at least 2 hours.

Baking

  • Preheat your oven to 350°F (175°C).
  • Remove logs from the refrigerator and slice them into 1/4 inch thick rounds.
  • Place the cookie rounds on a parchment-lined baking sheet, leaving space between each.
  • Bake in the preheated oven for about 12-15 minutes, until firm to the touch.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Store leftover cookies in an airtight container at room temperature for up to one week or freeze for longer storage.
