Ingredients

For the Nut Bars

  • 1 cup mixed nuts (almonds, cashews, pecans)
  • 1 cup dark chocolate chips (70% cocoa)
  • 1/2 cup honey or maple syrup Can substitute with agave syrup or coconut nectar.
  • 1/2 teaspoon sea salt Plus extra for topping.
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 2 tablespoons coconut oil

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  • In a microwave-safe bowl, melt the dark chocolate chips with the coconut oil until smooth.
  • In a large mixing bowl, combine the mixed nuts, rolled oats, honey or maple syrup, vanilla extract, and half of the melted chocolate. Mix thoroughly until well coated.
  • Press the nut mixture evenly into the prepared baking pan and drizzle the remaining melted chocolate over the top.

Baking

  • Bake in the preheated oven for 15-20 minutes or until the edges turn golden brown.
  • While still warm, sprinkle with extra sea salt.

Cooling and Serving

  • Allow the bars to cool completely in the pan before lifting them out and cutting into squares.

Notes

Store in an airtight container at room temperature for a week, or refrigerate for longer freshness. These bars are also freezable for up to three months.
