Ingredients

Vegetables

  • 3 cups green cabbage, finely shredded
  • 2 cups purple cabbage, finely shredded
  • 1 cup carrots, grated

Dressing

  • ½ cup mayonnaise
  • 1 tablespoon white vinegar
  • ½ tablespoon apple cider vinegar
  • 2 teaspoons sugar
  • ½ teaspoon celery seed

Instructions

Preparation

  • In a medium bowl, whisk together the mayonnaise, white vinegar, apple cider vinegar, sugar, celery seed, salt, and black pepper until everything is smooth and well combined.
  • Thinly slice the green and purple cabbages and then grate the carrots. This step is essential to achieve that perfect crunch!

Mixing

  • In a large bowl, add the prepared vegetables and pour the dressing over them. Toss everything together until the vegetables are fully coated with the creamy dressing.

Chilling

  • Cover the bowl and refrigerate the coleslaw for at least 1 hour.

Serving

  • Transfer the coleslaw to a serving bowl and garnish with a sprinkle of additional celery seed or fresh herbs like parsley for a pop of color.

Notes

Feel free to add other crunchy veggies such as bell peppers or radishes. For a lighter version, substitute half of the mayonnaise with Greek yogurt. Add a tablespoon of Dijon mustard to the dressing for an extra flavorful twist.
